Apple Turkey Breakfast Sausage

INGREDIENTS:

  • 1 lb. 93/7 turkey sausage

  • 130 grams apple, any variety, finely chopped

  • 100g white onion, finely chopped

  • 2 garlic cloves, minced or 1/2 tsp garlic powder

  • 1 tsp fennel seeds, crushed

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 tsp sage or poultry seasoning

DIRECTIONS:

  1. Bring a large skillet to medium/high heat. Spray lightly with cooking oil and add apple, onion and garlic. Saute for 4-5 minutes until slightly soft and remove.

  2. In a large bowl combine turkey, apple/onion mixer and all spices. Mix well with clean hands and weigh mixture. Divide by 12 and form into individual patties (wet hands with water or cooking spray to keep meat from sticking)

  3. Heat a skillet to medium high head and cook patties for 3-4 minutes each side or until cooked through. Repeat in batches until all patties are cooked and store in an air tight container for meal prep.

    NOTES on serving suggestion: For a quick meal prep breakfast prepare large batch of Kodiak protein pancakes and make mini pancake and sausage breakfast sandwiches!
