Crispy Potato Breakfast Bowl

INGREDIENTS:

  • 100g baby red potatoes 

  • 100g egg whites

  • 1 egg

  • 50g onions

  • 2 cups fresh spinach

  • 8 turkey pepperoni slices

  • 1 tbsp. grated parmesan cheese

  • red pepper flakes

  • 1/4 cup low fat mozzarella cheese


DIRECTIONS:

Preheat oven to 425 degrees.

  1. Spray a lined baking sheet with cooking oil and place potatoes, quartered and seasoned with salt and pepper on baking sheet. Line pepperonis on baking sheet with potatoes. Place in over for 20-25 minutes.

  2. In a small bowl whisk together egg whites, egg and mozzarella cheese, set aside.

  3. Bring a large skillet to medium/high heat and spray with cooking oil. Add sliced onion and spinach, cooking for 6-7 minutes until spinach wilts and onions begin to brown. Turn heat down and push spinach and onions to one side.

  4. Add egg mixture and cook 4-5 minutes on low until eggs are cooked and fluffy. Remove from heat.

  5. Assemble bowls with potatoes, spinach, onions, eggs and pepperonis. Top with red chili flakes and parmesan cheese. Enjoy!
