Fiesta Bowl


  • 4 oz. cooked lean ground beef

  • 1 Joesph’s pita

  • 50g frozen corn

  • 60g black beans

  • 1 tsp. taco seasoning.

  • 25g avocado

  • 1 jalapeno

  • 1/4 cup fresh pico de gallo

  • 1 head romaine lettuce


  1. Preheat oven to 400 degrees. Using a pizza cutter, slice pita into long, thin “tortilla” strips. Place on a baking sheet and sprinkle 1 tsp taco seasoning over top.

  2. Bake for 7-8 minutes or until tortilla begins to brown. Remove and set aside to cool.

  3. Assemble bowl by chopping romaine, and adding on top; corn, black beans, pico de gallo, ground beef and avocado. Top with tortilla strips and serve with bolthouse farms cilantro ranch!
