Parmesan Potato and Steak Salad

INGREDIENTS:

  • 3 oz. lean flank steak 

  • 2 cups spring mix

  • 50g red onion

  • 1 hard boiled egg

  • 1/2 ounce crumbled goat cheese

DIRECTIONS:

  1. Pre heat oven to 425. Slice baby red potatoes and season with salt and pepper. Spray lightly with olive oil. Place in oven and bake for 30-35 minutes

  2. Heat a cast iron skillet or grill pan to high heat. Season flank steak with salt and pepper each side. 

  3. Sear steak for 3 minutes each side for 1 inch thickness. Remove and allow to cool before slicing.

  4. Once potatoes are done, remove and sprinkle with parmesan cheese. Assemble salad with steak, red onion, hard boiled egg and goat cheese.

    Notes:

    To make lower fat sub chicken for steak and remove yolk from hard boiled egg.
