Sunny Side Up Omelet

 

Feeling like eggs in the morning? I gotchu covered with this cheesy high protein omelet!

Makes: 1 omelet 

Serving size: 1 omelet ( 35P / 5C / 6F )

Sunny Side Up Omelet

  • 180g egg whites

  • 28g mozzarella cheese

  • 1tbsp Parmesan

  • Handful of spinach

  • Handful of mushrooms

DIRECTIONS:

  1. Spray pan with cooking spray and pour egg whites into the pan.

  2. Cover and cook until egg whites have gone pure white.

  3. Flip and top cooked side with mozzarella, spinach, and mushrooms. Cover again and let the cheese melt and veggies cook.

  4. Once cheese is melted place on plate and sprinkle Parmesan cheese on your omelet.
