Vanilla Fig Baked Oats

INGREDIENTS:

  • 2 cups rolled oats

  • 125g 2% fat vanilla Greek yogurt

  • 2 cups unsweetened cashew milk

  • 1 egg

  • 1/4 cup cashew butter

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 2 scoops vanilla protein (60g)

  • 1/4 tsp salt 

  • 1/4 tsp baking power

  • 3 fresh figs, sliced thin

  • 9 individual 5.3 ounce containers light and fit vanilla Greek yogurt (for serving)


DIRECTIONS:

  1. Preheat oven to 350 degrees. 

  2. In a large bowl combine oats, protein powder, baking powder, salt and cinnamon .

  3. In a separate bowl combine cashew milk, beaten egg, and vanilla extract.

  4. Slowly add wet to dry ingredients and stir to combine. Using a rubber spatula, stir in cashew butter and Greek yogurt.

  5. Once combined transfer mix to a 9X9 pan lightly coated with cooking oil. Bake for 35 minutes, remove and top with sliced figs, return to oven for an additional 10 minutes. Remove and allow to cool before slicing into 9 squares. Serve with 5.3 ounces (  container) vanilla Greek yogurt. Optional drizzle with cashew butter if you need more fat macros!
